SAMU Bar Sushi & Hibachi was founded by Chef Ferry S. Chow and is now proudly managed by Dessy Chow, who brings over 10 years of experience in culinary excellence and hospitality. SAMU is the third of five successful restaurant concepts developed by Chef Chow, each reflecting his passion for innovation, quality, and community.

In 2012, Chef Ferry Chow created the now-iconic “Big Dam Bridge Roll,” a signature dish inspired by his wife, who exercised daily at the Big Dam Bridge while pregnant with their twins. This roll represents the values of strength, dedication, and love that continue to define SAMU today. The Big Dam Bridge Roll remains one of our proudest creations and a customer favorite.
